Our Process
At Hays Co. Bar-B-Que and Catering we have stayed true to Texas tradition by only cooking on 100% wood burning pits.
We use a dry rub and both mesquite and post oak wood to give our meats a unique and flavorful taste.
Our briskets are smoked up to 18 hours and our sausage is made in house using a combination of beef and pork and an array of seasonings.
Our process gives each of our meats an outstanding flavor that makes it hard to choose a favorite.
